National Grain Free Day

Founded in 2019 this day was created by Siete Family Foods to bring awareness to those that are unable to eat grains due to various dietary restrictions or health reason. A couple of the reccomded ways to celebrate this day is to try new recipes and to cook togther as a family.

Grain Free Cranberry Bread

Ingredients

  • 4 tbsp butter, melted, can also use coconut oil⁠
  • 1 c almond flour
  • 1 tbsp coconut flour
  • ⁠2 tbsp potato starch⁠
  • ¼ c tapioca flour⁠
  • ½ c cassava flour
  • ⁠2 tbsp golden flaxseed meal
  • ⁠1 c light brown sugar or coconut sugar
  • ⁠1.5 tsp baking powder
  • ⁠1.5 tsp baking soda⁠
  • 1 tsp apple cider vinegar
  • ⁠1 tsp salt⁠
  • 1 egg, lightly beaten (3 tablespoon if using JUST EGG)⁠
  • ¾ c almond milk (any nut milk or milk will also work)
  • ⁠1 bag cranberries, washed and dried⁠
  • Turbinado sugar for topping⁠

Directions

  1. Preheat oven to 350ºF
  2. Butter and flour a 9×5-inch loaf pan and set aside
  3. ⁠Whisk together gluten free flour blend, brown sugar, baking powder, baking soda, and salt
  4. Set aside
  5. ⁠Combine butter, egg, apple cider vinegar, and almond milk
  6. Add the wet mixture to the dry mixture and fold in cranberries
  7. ⁠Pour batter into the prepared pan, top with turbinado sugar
  8. Bake for 1 hour 15 minutes or until the toothpick inserted into the middle and comes out clean
  9. ⁠Let bread cool for 30 minutes, invert and turn right-side-up on a cooling rack
  10. Let cool completely before slicing.
